Spagetti Squash with Sauteed Vegetables
SPAGHETTI SQUASH WITH
SAUTEED VEGETABLES
To prepare spaghetti squash: cut half lengthwise, scoop out seeds and place cut side down in pan with shallow water. Bake at 350 degrees until tender, about an hour. When close to done, prepare sautéed vegetables:
Julienne zucchini and carrots, add onion and fresh garlic; sauté in butter until slightly tender.
When squash is done, let cool, then scoop out into serving bowl. Add the sautéed vegetables, cut up tomato and parmesan cheese.
