<div><span style="font-size: medium; font-family: helvetica;">It's been a busy week here on the farm!&nbsp; Fences are nearly fixed, crops are in the ground (early red potatoes, beets, zucchini, cucumbers, spaghetti squash, and French filet green beans) vegetable patches cultivated, onions weeded, our new berry patch is underway, and we have a huge extra event scheduled for tomorrow!&nbsp; Once again we will be providing lunch and snacks for the native plant sale at Penn State's Shavers Creek Enviromental Center.&nbsp; If you would like to check it out, come anytime between 10 and 2:00 tomorrow (Saturday), there will be plenty of folks selling flowers, shrubs, and trees native to PA...not to mention the great food that will be available!!!&nbsp; (Soups, salads, sandwiches, and plenty of other goodies!)</span></div>

<div><span style="font-size: medium; font-family: helvetica;">Saturday the 12th, we will be processing our next round of chickens, so we are now accepting orders for whole chickens, 1/2 chickens, livers, and our (soon to be famous) pet food.&nbsp; We will have them fresh at market the following Tuesday, but these tasty morsels don't seem to last long!<br /></span></div>

<span style="font-family: helvetica; font-size: medium;">Once again we are a little late, but I guess that could be a sign that things are a little too crazy around here!&nbsp; The root cellar is filling up with beets, garlic, and onions--the storage potato harvest will begin this week, and the last field plantings for the year will happen this week--lettuce, mesclun, spinach, and arugula. <p class="MsoNormal"><span style="font-family: trebuchet ms,geneva; font-size: small;">Organic produce farming practices focus on fertilizing the soil with compost, plant waste, mined substances found naturally, and aged animal manures. This practice actually feeds the soil organisms, and the organisms are then able to introduce many compounds that help the plants through combining with soil minerals and making them more available to plant roots. The presence of these microorganisms helps to explain the trend showing the higher mineral content of organic food crops.&nbsp; When you compare the levels of heavy metals in organic versus conventionally grown produce, the levels are markedly higher in the conventionally grown group.&nbsp; Whether you are buying locally grown produce, or shopping at your local grocery store, the health benefits and flavor of organically grown produce certainly are worth it! </span></p>

<p class="MsoNormal" style="margin-right: -0.25pt"><span style="font-family: trebuchet ms,geneva; font-size: small;"><span style="font-family: Calibri">Dry aging is simply allowing the beef to hang in a controlled environment for a select amount of time prior to the final cutting.<span>&nbsp; </span>Since aging in an uncontrolled environment would normally allow bacteria and mold to act on the beef in a negative way, it's carried out at low temperatures, generally between 34 and 38 F. Beef can be aged anywhere from a few days to as long as six weeks, our beef is aged for 21 days, as this seems to optimize flavor and tenderness while limiting the losses as dry aging results in a loss of meat over time due to water evaporation and surface mold (which must be trimmed off). <span>&nbsp;</span>Directly after cattle are slaughtered, their meat is generally quite tender, which is one reason people like fresh-killed meat. However, since few of us adjoin a stockyard, most of us have to settle for meat that's not nearly as fresh. During the first 12 to 24 hours postmortem the meat will toughen as the muscle fibers shorten. After that, however, enzymes in the meat attack the structural proteins that make meat tough (a process called "postmortem proteolysis"), resulting in slow and natural tenderization.<span>&nbsp; </span></span></span></p>

As mentioned earlier, when these two fatty      acids is out of nutritional balance in a food that is consumed, it is not      healthy for the body. This is a major difference between these two types of      beef and tips the scale for health in the direction of grass fed.<br /><br /></span> <!--[if !supportLineBreakNewLine]--> <!--[endif]--></li>
<li class="MsoNormal"><span style="font-family: helvetica; font-size: small;">Grain fed beef has a lot more saturated fat      than grass fed beef. Saturated fat is, of course, a known factor in heart      disease development. <p class="MsoNormal"><span style="font-family: georgia,palatino; font-size: small;">From mid</span><span style="font-family: georgia,palatino; font-size: small;">-April though December our chickens are raised on fresh pasture rich in grasses, broadleaf foliage, and clover.&nbsp; It has been estimated that a bird raised on pasture will eat up to 30% of their diet on the grasses, forage, and insects, which increases both the Omega-3 and CLA content in the meat.</span></p>

<p class="MsoNormal"><span style="font-family: georgia,palatino; font-size: small;">Our favorite way to enjoy the first meal is to do a rub of granulated garlic, sea salt, black pepper, and seasoned salt.&nbsp; Then put the chicken on the grill mounted rotisserie at 300 degrees for 90 minutes for a 5 pound chicken.&nbsp; The "planned-overs" work well for a pasta dish or stir-fry the next day.&nbsp; The rest of the carcass gets boiled down for some awesone home made chicken stock.&nbsp; <br /></span></p>

<p class="MsoNormal"><span style="font-family: helvetica; font-size: small;">When chickens are raised on pasture they can get as much as 30 percent of their nutritional needs from insects, grass, clover and other greens; As a result, the meat is high in omega-3 fatty acids, vitamin E, vitamin A, folic acid, and carotenoids. Chickens were designed to need high quality protein from grains in their diet, so we have worked with our local feed mill to design a custom blend.&nbsp; We have incorporated numerous strains of probiotics, alfalfa meal, and kelp meal, which allows us to decrease the level of GMO crops, and raise the healthiest, happiest chickens around! </span></p>
<p class="MsoNormal"><span style="font-family: helvetica; font-size: small;">A) Health benefits:</span></p>

Studies      suggest that if your diet contains roughly equal amounts of these two      fats, you will have a lower risk of cancer, cardiovascular disease,      autoimmune disorders, allergies, obesity, diabetes, dementia, and various      other mental disorders.<br /> People with ample amounts of omega-3 fatty acids in their diet are less      likely to have high blood pressure or an irregular heartbeat. They are      also less likely to have a heart attack. Research also suggests that a      diet rich in omega-3s may help reduce the risk of cancer. However, only      40% of Americans consume adequate levels of omega-3s. Since omega-3s are      formed in the green leaves of plants, animals that graze on grass have      much higher levels of this fatty acid.</span> </li>
