More new goodies coming from the kitchen this week: vegetable beef soup (made with grass fed angus and many of our vegetables), tomato basil stuffed pitas, and spinach feta hummus.

Here is what we have available this week:

CARNIVORES CORNER:

Beef:  Grass Fed English Aged Angus is now available year-round. 

So, we are accepting orders- we will process when we have at least 3/4 of the animal ordered.  Extra lean hamburger is available weekly in 1 pound packages for $5 per pound.  Order 10 pounds or more for $4.50 per pound.   

Chicken:  We are now accepting orders for fresh dress chickens.  It looks like we will be processing within the next 14-20 days depending on the processors schedule.  Because they are winter raised chickens, they have not had access to pasture, but they have been raised on a peat moss bedding which most naturally replicates their natural habitat--the forest floor!  We anticipate them ranging between 4 and 5.5 pounds.  Please order soon...quantities are limited!

Tabouleh:  A delicious and nutritious grain salad made with organic bulgar (cracked wheat), tomatoes, onions, garlic tossed with a lemon dressing.

As this is being written, Eric is dismantling what is left of the high tunnel - we have purchased the replacement parts, so it won't be long until we'll have a new one!  Gratefully, our insurance covered the cost, whew!  Also, exciting news coming from the kitchen - we've upgraded to the next level of licensing, which becomes official on Monday.  This means that we can now offer prepared foods - yippee skippee!  The first thing to come will be soups, using as much of our meats and produce as possible.  Not sure what all may follow, but give me a few weeks to think about it and I'll come up with some yummy dinner options.  We're thinking about, and preparing for, spring . . . maybe it will be here one of these days!

KOMBUCHA- Kombucha, a cultured tea, originates in the Ural mountain region of Russia and is said to be a powerful aid to the body’s natural cleansing process, a boost to the immune system and a proven prophylactic against cancer and other degenerative diseases. 

Flavors available: passion fruit papaya, ginger, apricot, and pomegranate - $3.50 for 32 oz.  For those interested in culturing their own tea, the starter can be purchased for $6.00.  

SPROUTS- This is only one example, but broccoli sprouts contain Vitamins A, D, C, E and K anti-oxidants, calcium, iron, magnesium, phosphorus, potassium, zinc carotene, chlorophyll, amino acids, trace elements, and antioxidants.  And beyond this, the John’s Hopkins institute uses them in their liver cancer treatment protocol!

Our sprouts are grown weekly -  radish, broccoli, clover, and alfalfa.   Price is $2.25 for 5 oz. (broccoli - 4 oz.)

Pasture RaisedPoultry

From May through December, both our chickens and capons are raised on pasture rich in grasses, broadleaf foliage, and clover.  It has been estimated that a bird raised on pasture will eat up to 30% of their diet on the grasses, forage, and insects, which increases both the Omega-3 and CLA content in the meat..  From December through April, our poultry is raised on a peat moss bedding, which is the next best thing to the pasture.  The chicken was designed to live on the forest floor, so the chickens recieve all of the benefits from the high acidity which occurs naturally on the forest floor.  All poultry is vacuum sealed, and immediately cooled to at minimum 40 degrees.

Why Pasture-raised Poultry?

When chickens are raised on pasture they can get as much as 30 percent of their nutritional needs from insects, grass, clover and other greens; As a result, the meat is high in omega-3 fatty acids, vitamin E, vitamin A, folic acid, and carotenoids. Chickens were designed to need high quality protein from grains in their diet, so we have worked with our local feed mill to design a custom blend.  We have incorporated numerous strains of probiotics, alfalfa meal, and kelp meal, which allows us to decrease the level of GMO crops, and raise the healthiest, happiest chickens around!

A) Health benefits:

• More Omega-3 essential fatty acids also called good fats
  There are two families of essential fatty acids (EFA) omega-6 and omega-3 fatty acids. Studies suggest that if your diet contains roughly equal amounts of these two fats, you will have a lower risk of cancer, cardiovascular disease, autoimmune disorders, allergies, obesity, diabetes, dementia, and various other mental disorders.
  People with ample amounts of omega-3 fatty acids in their diet are less likely to have high blood pressure or an irregular heartbeat. They are also less likely to have a heart attack. Research also suggests that a diet rich in omega-3s may help reduce the risk of cancer. However, only 40% of Americans consume adequate levels of omega-3s. Since omega-3s are formed in the green leaves of plants, animals that graze on grass have much higher levels of this fatty acid.
• More natural CLA
  Conjugated Linoleic Acid or CLA is a type of fat that may prove to be one of our most potent cancer fighters as well as a “fat-burning” property, which helps the body convert fat to lean muscle.
• More beta-carotene -Found in fresh grass, this vitamin helps reduce the risk of cancer and cardiovascular disease
• Higher Vitamin E
  Vitamin E is an important antioxidant, which boosts the immune system and may help decrease the risk of heart disease. Grass and clover contain high amounts of vitamin E. As a result, pasture-raised meat, milk and eggs contain more vitamin E. Switching to the meat, milk, eggs and dairy products of grass-fed animals is one way to restore the vital nutrients to your diet.

Hope you had a good week and enjoyed what felt like a heat wave these past few days!  Lots of new lambs this week and more to come, so we're keeping a close watch on the flock.  New ideas are cookin' in the kitchen, so watch for some of them to make their debut as they pass the taste test!  Some of the new offerings available now include a sprouted spelt with oats pancake mix - makes really hearty pancakes, especially yummy with fruit and nut toppings.  The second new item is black bean humus - a great nutritious and healthy lunch or snack when paired with our garlic infused sesame flax flatbread, which is also new.  And finally, check out our homemade vanilla made with organic Madagascar vanilla beans - just the aroma alone will take you away!  Watch for more healty creations in the coming months ...
