Sorry for 2 emails in 1 week, but we forgot to mention that when we return we will be processing our last round of chickens for the year...they will not be available again until early March 2012!  Although this is a large round, we do not anticipate them lasting past Christmas, so we wanted to give you ample opportunity to place pre-orders.  Because they are vacuum sealed in freezer grade plastic, they will last for months in your freezer.  We will have split chickens available, but they must be preordered before December 15th.

Our Harvest Share Program is similar to the conventional CSA program, with a twist!  We wanted to offer more flexibility to better serve our customers with plenty of choice and unlimited quantities while requiring no commitment to buy each week.  Our Harvest Share Program is offered on a year-round basis (limited offerings from November through April).  When you join our Harvest Share Program, you will receive a weekly email which will list all of our available products, including produce, meats, baked goods, breads, specialty and partner items.  If you wish to place an order, you simply return an email to us with your order.  We give you the option to pick up at our farm, at one of our farmers' markets, or a drop off point.   It’s simple to join – just fill out the mailing list sign up form!

Eden View Produce

When God created the Garden of Eden, there were no artificial stimulants, pesticides, herbicides or genetically altered crops. God’s creation was perfectly natural – the original organic system!   Although we are not a Certified Organic farm, we do strive to follow all guidelines as set forth by the USDA.  It is our belief that a healthy soil will grow some of the most nutritious and delicious produce you will find. 

Organic produce farming practices focus on fertilizing the soil with compost, plant waste, mined substances found naturally, and aged animal manures. This practice actually feeds the soil organisms, and the organisms are then able to introduce many compounds that help the plants through combining with soil minerals and making them more available to plant roots. The presence of these microorganisms helps to explain the trend showing the higher mineral content of organic food crops.  When you compare the levels of heavy metals in organic versus conventionally grown produce, the levels are markedly higher in the conventionally grown group.  Whether you are buying locally grown produce, or shopping at your local grocery store, the health benefits and flavor of organically grown produce certainly are worth it!

We grow a large selection of produce from April through November, while offering winter storage crops and limited greens through the winter.  Below is a list of what we anticipate having throughout the season.

English Aged Grass Fed Angus Beef

We partner with a neighboring beef farmer who raises our grass fed Angus.   He has worked to develop pastures with grasses that have been imported from throughout the world. He also uses an innovative crop rotation plan, which includes maturing his crop and instead of using a mechanical process, he allows the herd to enter the fields in a controlled manner and harvest, fertilize, and improve the soil structure in one step.

Unlike most grass fed operations, his herd has been selected over the past 20 years for their ability to marble on a strictly grass based diet.   If you choose to compare this product to most other grass fed beef, you will find this to be clearly superior in both taste and texture.  The beef is sold in 1/8, 1/4, 1/2, 3/4 or whole portions.   The beef comes frozen, vacuum sealed and labeled.  Steaks—2 per pack, roasts (bone in)—2 lb. packages, and hamburger—1 pound packages.  

Price is $3.60 per pound hanging weight

We are able to offer 1 pound packages of hamburger for $5.25 per pound or $4.75 per pound for orders of 10 pounds or more.

Why is our beef “Dry Aged”?

Dry aging is simply allowing the beef to hang in a controlled environment for a select amount of time prior to the final cutting.  Since aging in an uncontrolled environment would normally allow bacteria and mold to act on the beef in a negative way, it's carried out at low temperatures, generally between 34 and 38 F. Beef can be aged anywhere from a few days to as long as six weeks, our beef is aged for 21 days, as this seems to optimize flavor and tenderness while limiting the losses as dry aging results in a loss of meat over time due to water evaporation and surface mold (which must be trimmed off).  Directly after cattle are slaughtered, their meat is generally quite tender, which is one reason people like fresh-killed meat. However, since few of us adjoin a stockyard, most of us have to settle for meat that's not nearly as fresh. During the first 12 to 24 hours postmortem the meat will toughen as the muscle fibers shorten. After that, however, enzymes in the meat attack the structural proteins that make meat tough (a process called "postmortem proteolysis"), resulting in slow and natural tenderization. 

Why is grass fed beef better than grain fed?

• Grain fed beef has more Omega-6, compared to the Omega-3 in the same meat. As mentioned earlier, when these two fatty acids is out of nutritional balance in a food that is consumed, it is not healthy for the body. This is a major difference between these two types of beef and tips the scale for health in the direction of grass fed.
  
  
• Grain fed beef has a lot more saturated fat than grass fed beef. Saturated fat is, of course, a known factor in heart disease development. Reducing saturated fat in the diet is a good thing and grass fed beef can help.
  
  
• Grain fed beef has less CLA, or Conjugated Linoleic Acid.

CLA has been shown to reduce body fat, help with weight loss, increase metabolic rate, help to lower insulin resistance and cholesterol, among other health benefits

-    Grass fed beef excels nutritionally in vitamin A, E and Beta Cartotene, over grain fed beef.

·      Grass fed beef is nutritionally superior to grain fed, for these reasons and more.

How much do I need to order?

Due to USDA guidelines, we only sell the beef in portions of the entire animal - we cannot sell individual cuts.  You can order 1/8, ¼, ½, or a whole beef.  We are actually selling you the “hanging weight” of the portion of the animal you choose to purchase, and the fee the butcher charges.  1/8th of a beef is usually anywhere from 75-90 pounds hanging weight and on average includes 20-25 lbs. of hamburg, 6-8 packs of various cuts of steaks (2 per pack) and 5-7 various cuts of roasts (2 lb. avg.).

From mid-April though December our chickens are raised on fresh pasture rich in grasses, broadleaf foliage, and clover.  It has been estimated that a bird raised on pasture will eat up to 30% of their diet on the grasses, forage, and insects, which increases both the Omega-3 and CLA content in the meat.

Our custom blend of feed is a proprietary mix that we designed to include multiple strains of probiotics, vitamines, minerals, brewers yeast, and kelp meal.  By adding the additional ingredients to our blend we have been able to cut the amount of soy beans by nearly 50%

While the chickens are on pasture, they are raised in "chicken tractors" which were designed and made the standard in pasture raised poultry by West Virginia native Joel Salatin.  These innovative boxes allow for plenty of fresh air, sunlight, and with a little effort, the flock gets fresh pasture daily.  We strive to only use a section of pasture once per day during the growing season.  Three acres of the Eden View farm is dedicated to raising the best tasting, and healthiest pasture raised chickens available!

Our chickens dress out at 4 - 6 pounds, so you can safely figure on at least two meals per bird for the average family of 4.

Our favorite way to enjoy the first meal is to do a rub of granulated garlic, sea salt, black pepper, and seasoned salt.  Then put the chicken on the grill mounted rotisserie at 300 degrees for 90 minutes for a 5 pound chicken.  The "planned-overs" work well for a pasta dish or stir-fry the next day.  The rest of the carcass gets boiled down for some awesone home made chicken stock. 

January through April, our poultry is raised on a peat moss bedding, which is the next best thing to the pasture--the peat moss bedding is the closest thing to the chickens natural habitat--the forest floor.  

All poultry is vacuum sealed, and immediately cooled to at minimum of 40 degrees.

New Schedule for the 2011 season!!

Last season we couldn't meet the demand raising 100 chickens per month, so we started this season raising 150 monthly...we still couldn't meet the demand so we are once again ramping up...but his time we are moving to 300 birds per month.  Here is our projected processing schedue--our plan is to be able to offer frozen chickens during the weeks we are not processing.

Why Pasture-raised Poultry?

When chickens are raised on pasture they can get as much as 30 percent of their nutritional needs from insects, grass, clover and other greens; As a result, the meat is high in omega-3 fatty acids, vitamin E, vitamin A, folic acid, and carotenoids. Chickens were designed to need high quality protein from grains in their diet, so we have worked with our local feed mill to design a custom blend.  We have incorporated numerous strains of probiotics, alfalfa meal, and kelp meal, which allows us to decrease the level of GMO crops, and raise the healthiest, happiest chickens around!

A) Health benefits:

• More Omega-3 essential fatty acids also called good fats
  There are two families of essential fatty acids (EFA) omega-6 and omega-3 fatty acids. Studies suggest that if your diet contains roughly equal amounts of these two fats, you will have a lower risk of cancer, cardiovascular disease, autoimmune disorders, allergies, obesity, diabetes, dementia, and various other mental disorders.
  People with ample amounts of omega-3 fatty acids in their diet are less likely to have high blood pressure or an irregular heartbeat. They are also less likely to have a heart attack. Research also suggests that a diet rich in omega-3s may help reduce the risk of cancer. However, only 40% of Americans consume adequate levels of omega-3s. Since omega-3s are formed in the green leaves of plants, animals that graze on grass have much higher levels of this fatty acid.
• More natural CLA
  Conjugated Linoleic Acid or CLA is a type of fat that may prove to be one of our most potent cancer fighters as well as a “fat-burning” property, which helps the body convert fat to lean muscle.
• More beta-carotene -Found in fresh grass, this vitamin helps reduce the risk of cancer and cardiovascular disease
• Higher Vitamin E
  Vitamin E is an important antioxidant, which boosts the immune system and may help decrease the risk of heart disease. Grass and clover contain high amounts of vitamin E. As a result, pasture-raised meat, milk and eggs contain more vitamin E. Switching to the meat, milk, eggs and dairy products of grass-fed animals is one way to restore the vital nutrients to your diet.

…Use steroids, growth hormones, or antibiotics.  Nor will we sell or chickens boneless, skinless, or in styrofoam lying on a diaper!! (You need to go to a grocery store for that!!)
