Greetings Everyone -

This week at the Boalsburg Farmers' Market we are going to host our 3rd annual local artists' fair - there will be 14 local artists painting, sculpting, and glass blowing.  It is always a great way to spend an afternoon to not only support your local farmers' and producers, but it is also a great opportunity to visit with our local artists.  Kerri Smith will also be joining us with her guital playing her own unique folksy blue grass country style music from 4-5:30.

What's new outside??
   STRAWBERRIES!!!!  There are plenty of strawberries this week, so if you are looking for enough chemical free strawberries for freezing--now's a good time to place your order.  Please be aware that if we have more orders than strawberries, we will fill the orders as we receive them.  This week was a seeding and transplanting marathon!  400 brussels sprouts plants, 300 hills of cucumbers, 300 hills of zucchini, 900 sweet potato slips, 900 hills of spaghetti squash, 256 basil plants, 76 pablano pepper plants, 200 feet of hericot vert, and 1100 feet of lettuce mix have been added to the field!!!

HARVEST SHAK -
The Harvest Shak is open every Wednesday, Friday and Saturday from 10-7.  Our supply of dry goods will be here in a few weeks, so they will soon be added to all the other items you can find in the Shak.  We encourage pre-orders, especially for prepared food items (soups, salads, quiche, meat pies, etc.) to be sure you get the items you want.  For directions to The Shak click here scroll to the bottom of the page and look for the bubble in the middle of the map.

Where to find us:  Tuesdays from 2-6 in Boalsburg at PA Military Museum, click on the logo above to find out more about the outdoor farmers' market! If you have never visited this market it is a great way to spend an afternoon--lots of vendors and plenty of free parking. Fridays we make deliviers for pre-orders in the parking lot between Uncle Joe's Woodshed and Everything Natural in Altoona from 3:00-3:30.  Orders may also be picked up at the Harvest Shak Wednesday, Fridays or Saturdays from 10-7.  Please remember that orders for Tuesday/Wednesday need to be placed by noon on Monday, and Friday/Saturday orders are due by Wednesday evening.

Chicken: 
So far so good!!  The chickens have been out on pasture 4 days now with now predator problems, so it looks like we will have our first round of summer chicken available the first week of July.  Now is a great time to preorder to ensure you get the quantities you need!  We will be processing the first week
of every month through December.

Beef: 
Grass Fed English Aged Angus is now available year-round.
All beef will now be sold in vaccuum packed portions.  We are accepting orders for 1/8, 1/4, 1/2 3/4 or whole portions.  Extra lean hamburger is available weekly in 1 pound packages for $5 per pound.  Order 10 pounds or more for $4.50 per pound. Broccoli Asparagus Quiche:  Sold in individual size portions.

Stuffed Sprouted Pitas:  tomato/basil/feta, potato cheddar, spinach ricotta and leek mushroom.  Heat for 10-12 minutes at 350 degrees - makes a great compliment to soup or salad, or they can stand alone as a meal or a snack - great for lunches.

Hummus: Spinach Feta or Azuki AnchoChili (mild):  Made with organic beans 

Spelt Berry Apple Salad: a refreshing salad that's power packed with healthy stuff!  Made with sprouted spelt and kamut berries, apples, raisins and walnuts.

Nutty Date Snack Bites: A yummy crunch of brazil nuts and cashews bundled in a soft raw honey date and flax mixture, rolled in toasted sesame seeds - a true energy snack!  Sold 2 in a pack

What's new outside??
   Weeds!!!  After spending hours weeding and cultivating this week, I began to think how much easier this whole process would be if I just went to the hardware store and bought a big ole jug of Round-up!  It wasn't long after that I heard a report on the radio where studies have found a possible link to pesticides (weed control or insect control--they are both classified as pesticides) and autism-- just one of the reasons to keep weeding and cultivating!!  Here is some info that I found based on that study;  Autism Speaks.  But, some good news, while caring for the strawberry patch, I began to find a few ripe berries--It doesn't look like we will have too many for Tuesday, but hopefully by the end of the week we will have plenty! (Give us 2 weeks for freezing quantities)

Yes, the USDA does have yet another food recall out--alfalfa sprouts!  But, rest assured ours are not on the recall list!

What's new outside??
   This was a big week for transplanting--tomatoes, cucumbers, zucchini, and yellow summer squash are all in the ground (at least the first planting is)  The tomatoes in the high tunnel are now in blossom, and the green beans have germinated in the field--this year we decided to go with Hericot Vert, a thin French filet gourmet green bean.  This variety takes longer to produce, and yields much lower than last years variety, but the quality should make growing them well worth it!  Look for them in another 50 days or so...

Greetings Everyone -

What's new outside??
The early spring crops are all doing well, and the strawberries are in full blossom with lots of little green berries!  Look for them in 3-4 weeks.  Did you know that if you choose one field crop to eat organically--it's strawberries!  Strawberries have such thin skins so, unlike most fruits, strawberries will absorb whatever is sprayed on them.  Conventional farmers fumigate their fields with poison to kill weeds and bugs, and usually spray their berry crop with chemical fungacides and pesticides throughout the growing season--we don't!! The USDA says these sprays are safe, but.......

What's new in the kitchen??
  Had a great visit with a world reknown chef from Argentina who has been working with a local fishing resort.  He taste-tested some lacto-fermented vegetables (loved them, by the way!), toured the root cellar, greenhouses and gardens.  He is a strong supporter of eating fresh, local and seasonal foods.  We will be working with him to supply produce and prepared foods when he visits the US.   This is certainly an exciting opportunity for us!

What's new outside??
So far--so good!!!  All of the chicks are still here, it looks like the reinforcements worked!  This week was a big week for weed control, plenty of hand weeding and lots of cultivating by hand!  Remember what the old timers used to say--if you let one weed go to seed it will be kind enough to give you seven years of weeds!  Although we shouldn't always trust the extended forecast, as it stands right now, next week it looks like it will be safe to start transplanting the tender crops such as tomatoes, peppers, summer squash!

HARVEST SHAK OPENING - We're planning to open the Harvest Shak on Saturday, May 15.   We'll be open every Wednesday, Friday and Saturday from 10-7.  New this season will be locally roasted coffee (we couldn't keep up with roasting our own) - this coffee is truly a treat to sip - stop by to sample some.  Also new will be a small selection of dry goods - healthy pastas, sweetners, salt, etc.  These, of course, are in addition to our products as well as other local producer items such as honey, maple syrup, jams, and pottery. We will be putting prepared foods (soups, salads, quiche, stuffed pitas, etc.), in the Shak, however the amounts will be limited,  so we encourage pre-orders to be sure to get the items you want - for those who are nearby, orders can be picked up at the Shak during our open hours. 

What's new in the kitchen??
  I experimented with a fresh strawberry viniagrette dressing - turned out to be pretty yummy.  It will be available this week.  Finished off the buchavin vinegar (raw kombucha vinegar) with raspberries, blueberries and blackberries - it will be ready next week.  I've given the broccoli sprouts a rest for awhile, for no good reason, but think it's time to start them up again - the USDA published a report this week that research has found them to effective in prevention and treatment of cancer.  This follows Johns Hopkins similar report of several years ago.  So, there you go . . . get yourself some broccoli sprouts!

Where to find us:  Tuesdays from 2-6 in Boalsburg at the fire hall (behind the Uni-Mart along 322), Fridays in the parking lot between Uncle Joe's Woodshed and Everything Natural in Altoona from 3:00-3:30 and here on the farm by appointment.  Please remember that orders for Tuesday need to be placed by noon on Monday, and Friday orders are due by Wednesday evening.  This will be the last indoor market - we move to the military museum starting on the 18th, 2-6 p.m.  If you've never visited this market, it's a must for a great afternoon.  There are many vendors with a large selection of fresh, local foods, live entertainment, and easy parking.

What's new outside??
Weasle-proofing the brooder!!!  As many of you know, this spring we have lost nearly 200 chicks in a very "mysterious" way.  After talking with others who have rasied chickens in the area, the suspected culprit could be a weasle.  Wednesday, we will be getting our next round of 150 chicks--which will put my repair work to the test!

  Was busy as a beaver in the kitchen this week preparing food for the native plant sale held at Ronnymeade Historical Farm yesterday  (that's why we're  a little late getting this out!).  What a beautiful day it was - we enjoyed being under our canopy talking with those who came to the sale.  We were told that it was a slow customer day, we were delighted that we didn't take much food home!

What's new outside??
I finished planting the early crop of red skin potatoes--300 pounds of seed stock, nearly 1000 row feet of potatoes. Look for them starting late June, or early July.  Hopefully, the rain we have had the past few days will help the field greens, spinach, beets and arugula to get growing - look for them in the coming weeks.

What's new in the kitchen??
  I'm tempering my desire to keep adding new meal options, simply because I can't find any more hours in the days!  New soup this week is cream of asparagus - this will be short-lived unless I am able to freeze asparagus because it is a short season of harvest.

What's new outside??
This week was the dreaded spring cleaning week, but the landscaping around the house is ready for another growing season!  Next week the produce field will be the top priority...

What's new in the kitchen??
Love the new convection oven - must say that it is a bit challenging to get the right temperature and bake time because it is so high powered and efficient!  New this week is an orange fig nut crostada - made with a sprouted nutty crust, ricotta/chevre filling, topped with an orange fig spread and walnuts.  A different, but delectable treat!  Also, we'll have white chili (chicken, white beans, chilis) and chicken meat pies (potatoes, celery, carrots, onions).

Greetings Everyone -

What's new outside??
Well, not a whole lot!!!  I did finish mulching the onoins and seeded many flats--early cucumbers, green beans and more.  BUT, the week in the field was cut short with a basement flood!!!  We had a water pipe burst and until we found it there was nearly 4 inches of water throughout the basement.  Thankfully, the insurance company was there within 2 hours, as was the water remediation company.  Even with their help, we will not have everything back to normal until Monday sometime...there's always next week!

What's new from the kitchen??
Here it is - my new commercial convection oven and proofing unit!  I haven't had the time to even turn it on yet because of the water in the basement, but Monday early a.m. will be the test of whether I can figure out all the buttons and controls!  I'm expecting this addition will streamline alot of the food production for me and make me much more efficient.  Check out the listing below for still more new prepared foods this week.

Greetings All

This week, we will try a new format for the weekly update.  Because neither of us can seem to find the time to update the blog on a regular basis, we will start the email with news of what's happening around here--obviously, Cindy will take care of the kitchen updates and I will keep you up to date on what's happening outside! Keep watching--we will not only keep you updated, but we will be sharing helpful hints that might help you grow a better garden, or maybe even help guide you towards a healthier lifestyle!


What's new outside??
  Plenty!!  The new high tunnel is complete--unfortunately, the delay has us 3-4 weeks behind on collards, kale, tomatoes, and cucumbers.  But this week the field was plowed and field lettuce, spring onions, sugar snap peas, spinach, arugula, and beets were planted. I have also seeded the flats for field tomatoes--we are guestimating the there should be 200+plants ready to transplant in May.

The sprouted pitas have been a hit - a healthy side or meal - just heat and eat - tomato/basil/feta, leek/shiitake or potato cheddar.  You might want to try our own raspberry viniagrette dressing to go with the fresh lettuce that we have, or if you're hankering for a decadent chocolate treat, try the chocolate almond torte - just dark chocolate, eggs, cane juice and butter - NO flour.  Check the listing below for more items from the kitchen.

Here is what we have available this week:
All beef will now be sold in vaccuum packed portions!!  The pastures are greening up, so the hay rations are getting less and less--fresh green grass means higher levels of CLA, and better beef!  So we are accepting orders for 1/8, 1/4, 1/2 3/4 or whole portions - we will process when we have at least 3/4 of the animal ordered.  Extra lean hamburger is available weekly in 1 pound packages for $5 per pound.  Order 10 pounds or more for $4.50 per pound.  Right-click here to download pictures. Chicken: Only a very few left--next available will be early May.

Lamb: All cuts and sausage are sold out, but we will be picking up our newest product Monday--a smoked bologna with a very light seasoning mix and NITRATE FREE!!

From the high tunnel/root cellar:
spring lettuce mix, diakon radishes, potatoes, garlic, kohlrabi, and beets. 

From the kitchen:  Tarts (crusts made with organic spelt and organic flax):  Cheesecake and apple.   Sprouted Scones:  Dark Chocolate Chip/Almond, Orange Ginger, and Lemon Poppyseed.   Sprouted Cookies/Bars: Shortbread Cookies, Oatmeal Date Nut Bars.  Flatbreads: Tomato/Garlic/Onion (spelt),  and Asiago/Parmesan Herb (spelt)Sprouted Flatbreads: Sesame and  Apple Walnut.  Sprouted Breads: Poppyseed Spelt, Cinnamon Raisin Walnut (spelt), Four Grain baquette (all organic flours--sprouted wheat, sprouted spelt, quinoa, and oats) and dinner or sandwich rolls. 

Grass Fed Three Bean Chili:  Made with grass fed beef, a mix of three organic beans, our tomatoes (preserved in season), spices.

Stuffed Sprouted Pitas:   Tomato/Basil/Feta, Potato Cheddar, or Leek/Shiitake. Ready to heat and eat - makea a great compliment to soup or salad, or they can stand alone as a meal.

Hummus: Spinach/Feta or Aduki Ancho Chili:  Both of these are made with organic beans, olive oil and our garlic.  The ancho chilis are mild and give a nice pepper hint, but not a big bite.
