Weekly update--beef and chicken update

Greetings Everyone -

This week we will be sending the first round of paperwork over to the Ukraine for translation!  Within 4 weeks we hope to have all of our necessary documents in country and translated so we can get our dossier submitted to the Ukrainian government.  Now, it is just a waiting game for us--we are waiting for US immigration to complete our paperwork, and for the FBI to invite us to their Pittsburgh field office for fingerprinting. After we have those two steps completed we will be ready for the final submission to the Ukraine. It looks like we could be travelling within 10 weeks.


HARVEST SHAK - The Harvest Shak is open every Wednesday, Friday and Saturday from 10-7.  We encourage pre-orders for pick-up at the Shak, especially for prepared food items (soups, salads, quiche, meat pies, etc.) to be sure you get the items you want.  For directions to The Shak click here scroll to the bottom of the page and look for the bubble in the middle of the map.

Where to find us:  Tuesdays from 2-6 in Boalsburg at PA Military Museum, click on the logo above to find out more about the outdoor farmers' market If you have never visited this market it is a great way to spend an afternoon--lots of vendors and plenty of free parking. Fridays we make deliveries for pre-orders in the parking lot between Uncle Joe's Woodshed and Everything Natural in Altoona from 3:00-3:30 p.m.  Orders may also be picked up at the Harvest Shak Wednesday, Fridays or Saturdays from 10-7.  Please remember that orders for Tuesday/Wednesday need to be placed by noon on Monday, and Friday/Saturday orders are due by Wednesday evening.  
 

Here's what we've got this week:

CARNIVORES CORNER:

Chicken: 
We still have a few chickens in the freezer, most are between 3 and 4 pounds.  As it stands right now, we have our next processing date scheduled for next Saurday the 11th. They will be available fresh here at the farm between 6:00 and 7:00 Saturday evening, and Tuesday the 14th at Boalsburg.  There will only be one more round of processing before we leave for the Ukraine...please plan you orders accordingly!

Beef: 
Grass Fed English Aged Angus is now available year-round.
We are taking orders for the last processing date for 2010--if you are going to order, please have it in to us before  Monday the 13th of September!.  Quantities for placing an order are 1/8, 1/4, 1/2, 3/4 or whole portions of the animal and the cost is $3.50 per pound hanging weight.  Extra lean hamburger is available weekly in 1 pound packages for $5 per pound.  Order 10 pounds or more for $4.50 per pound.  The beef comes vacuum sealed and frozen.

From the field: Tomatoes, hericot vert (green beans), red skin potatoes, white skin potatoes, beets, swiss chard, and spaghetti squash, basil, garlic.  We can't believe how sweet the beet crop is this year--it could be the best tasting crop yet!!

From the kitchen:  Tarts (crusts made with organic spelt): Cheesecake.
Apple Dumplings - made with organic spelt crust and local apples.  Sprouted Scones:  Dark Chocolate Chip/Almond, Orange Ginger. Sprouted Cookies/Bars: Shortbread Cookies, Oatmeal Date Nut Bars.  
Sprouted Flatbreads: Tomato/Garlic/Onion,  Asiago/Parmesan Herb. Sprouted Bagels: Poppyseed Spelt, Cinnamon Raisin Walnut (spelt).  Sprouted Pita bread - 4 pack.

Chocolate Pecan Torte: Made with dark chocolate, free range eggs, NO FLOUR.  Similar,
but a bit more decadent, to a moist brownie.

Roasted Tomato & Garlic Soup - made with our tomatoes, garlic, onions, potatoes and basil.

Chicken Spinach Mushroom Pies:  Made with organic spelt crust, our chicken, potatoes and garlic, with spinach and mushrooms.  Comes in a moderate individual size - heat in oven for 10-12 minutes at 350 degrees until center is warm.

Tomato Onion Quiche:  Sold in individual size portions.

Stuffed Sprouted Pitas:  tomato/basil/feta, potato cheddar, spinach ricotta and leek mushroom.  Heat for 10-12 minutes at 350 degrees - makes a great compliment to soup or salad, or they can stand alone as a meal or a snack - great for lunches.

Hummus: Spinach Feta or Azuki AnchoChili (mild):  Made with organic beans 

Spelt Berry Apple Salad: a refreshing salad that's power packed with healthy stuff!  Made with sprouted spelt and kamut berries, apples, raisins and walnuts.

Nutty Date Snack Bites: A yummy crunch of brazil nuts and cashews bundled in a soft raw honey date and flax mixture, rolled in toasted sesame seeds - a true energy snack!  Sold 2 in a pack

Pancake Mix:  1) Organic spelt or  2) Organic sprouted spelt and oats 

Nutty Berry Mix Granola

Meats:  Grass fed hamburger, pasture-raised chicken

Products from our local partners:  Free range eggs, pure maple syrup

Dry Goods: organic spelt flour (3 lb. bag), organic sprouted spelt flour (3 lb. bag), organic white spelt spaghetti or angel hour (1 lb. bag), white spelt elbow macaroni (1 lb. bag).
