Weekly Update

Hi Everyone --

What a beautiful week of weather - hope you were able to get out and enjoy it some!  It's been so nice that the lettuce in our high tunnel (not the one that was destroyed earlier!) has come up, so we'll have some lettuce this week!  Even though it does have a bit of weather stressed edges, it's fresh out of the ground and will be wonderful to consume!  This means that there will be fresh salad dressing to go with the lettuce, a raspberry viniagrette, made in our kitchen.  In addition to the dressing,  we'll also have potato leek soup and flourless chocolate almond torte as new items this week.

We are accepting orders for 1/8, 1/4, 1/2 3/4 or whole portions - we will process when we have at least 3/4 of the animal ordered.  Extra lean hamburger is available weekly in 1 pound packages for $5 per pound.  Order 10 pounds or more for $4.50 per pound.  Right-click here to download pictures. Chicken:  Fresh chicken will be available at our Boalsburg market this week.  If you don't come to that market and want they before we freeze them (which will be Thursday), you can come to the farm for pick-up.  For our Friday/Saturday customers, we will deliver them frozen.  Because they are winter raised chickens, they have not had access to pasture, but they have been raised on a peat moss bedding which most naturally replicates their natural habitat--the forest floor!  We anticipate them ranging between 4 and 5.5 pounds.  

Lamb:  We will have loin chops, hot Italian sausage, and bologna (ready to eat).

From the high tunnel/root cellar:
spring lettuce mix, diakon radishes, potatoes, garlic, kohlrabi, and beets. 

From the kitchen:  Tarts (crusts made with organic spelt and organic flax):  Lemon berry and apple.   Sprouted Scones:  Dark Chocolate Chip/Almond, Orange Ginger, and Lemon Poppyseed.   Sprouted Cookies/Bars: Shortbread Cookies, Oatmeal Date Nut Bars.  Flatbreads: Tomato/Garlic/Onion (spelt),  and Asiago/Parmesan Herb (spelt)Sprouted Flatbreads: Sesame and  Apple Walnut.  Sprouted Breads: Poppyseed Spelt, Cinnamon Raisin Walnut (spelt), Four Grain baquette (all organic flours--sprouted wheat, sprouted spelt, quinoa, and oats) and dinner or sandwich rolls.  I'm still hanging on to my dwindling supply of sprouted spelt, and am hoping to be able to get more before it is totally gone!

Potato Leek Soup:  Made with our potatoes, onions, garlic and chicken stock, organic leeks, sour cream, spices.

Stuffed Sprouted Pitas:   Tomato/Basil/Feta, Potato Cheddar, or Leek/Shiitake. Ready to heat and eat and make a great compliment to soup or salad, or they can stand alone as a meal.

Hummus: Spinach/Feta or Aduki Ancho Chili:  Both of these are made with organic beans, olive oil and our garlic.  The ancho chilis are mild and give a nice pepper hint, but not a big bite.  

Tabouleh:  A delicious and nutritious grain salad made with organic bulgar (cracked wheat), tomatoes, onions, garlic tossed with a lemon dressing.

Sprouted Berry Apple Salad: a refreshing salad that's power packed with healthy stuff!  Made with sprouted spelt and kamut berries, apples, raisins, walnuts, grapes, orange dressing.

Nutty Date Snack Bites: A yummy crunch of brazil nuts and cashews bundled in a soft raw honey date and flax mixture, rolled in toasted sesame seeds - a true energy snack!  Sold 2 in a pack

Dark Chocolate Truffles:  A soft heavenly bite of creamy dark chocolate with either peanut butter, almonds or berry. 

Spreads:  Spinach Parmesan, Pesto, Orange Fig 

Salad Dressing:  Raspberry Viniagrette - made with olive oil, our garlic, balsamic vinegar and raspberry shrub

Lacto-Fermented Veggies:  Caraway Beets

Pancake Mix:  1) Organic spelt or  2) Organic sprouted spelt and oats (new)

Pure Vanilla Extract: Temporarily out of stock

Nutty Berry Mix Granola

Sprouts:  sandwich mix

Kombucha Tea:  Apricot, acai berry, wild berry, ginger

Meats:
  Grass fed hamburger
